Cold Smoked Salmon - Lox Recipes rich in omega fatty acids and B vitamins


Eggs and salmon are a perfect pair for a quick hearty breakfast dish loaded with omega-3 fatty acids and B6 and B12 vitamins. The scramble incorporates dairy-free sour cream to enrich the base and produce a creamy texture. Fresh avocados are garnished and also have ample sources of omega fatty acids.

Cold smoked salmon can also be labeled as Lox and has a salty, smoky flavor with a soft texture. Curing salmon in this cooking method does not disturb its nutrients, and provides extra depth of flavor to any recipe.

Serve up the scramble with a side of corn tortillas or toasted slices of gluten-free bread.
Serves: 4

Ingredients:
  • ·            4 Tablespoons olive oil
  • ·         1 shallot, thinly sliced
  • ·         8 large, omega-rich eggs
  • ·         8 ounces smoked salmon, roughly chopped
  • ·         3 Tablespoons dairy-free sour cream
  • ·         3 teaspoons fresh lemon juice
  • ·         3 Tablespoons fresh chives, minced
  • ·         2 medium ripe avocados, thinly sliced
  • ·         1 large tomato, diced
  • ·         Sea salt and fresh cracked black pepper to taste

Directions:
1 Heat the oil over medium heat in a large skillet. Whisk the eggs in a mixing bowl and set aside. In separate bowl, whisk the sour cream and lemon juice together and set aside.

2 Add the shallots to the oil and fry for 3 minutes, stirring with a wooden spoon. Add the egg mixture, salmon, and half of the chives. Continuously stir the egg mixture over medium heat to thoroughly mix the ingredients.

3Once the eggs are cooked 60 percent, stir in the sour cream mixture, and stir vigorously to incorporate into the egg mixture.

4 Cook the eggs for 3 more minutes and remove the pan from the heat. Season with the salt and pepper to taste.

To serve: Divide the scramble between 4 large plates; top each plate with the remaining chives, avocado, and tomatoes. Serve at once.
