Whole Wheat Angel Hair with Lemon Scented Zucchini



When the right combinations of ingredients are paired, it does not take much to create a savory pasta dish. In this simple recipe, whole wheat angel hair is tossed with fresh zucchini that has been quickly sautéed in olive oil and fresh lemons.

The dish pairs wonderfully with a dry white oaky chardonnay or soft Syrah. Add a side of grilled baguette slices and have one elegant meal. Soy Parmesan is used in the recipe and is easily found in the vegan section of major grocery stores. For those trying for the first time, you will be amazed how tasty this vegan cheese is!
Serves: 6
Prep time: 15 minutes ` Cook time: 20 minutes
Ingredients:

1 pound whole wheat angel hair pasta
1/4 cup kosher salt
4 Tablespoons olive oil, plus extra for garnish
4 cloves garlic, minced
4 large zucchini, thinly sliced on a bias
3 small lemons, zest and juice
1/2 cup soy Parmesan cheese, plus extra for garnish
Fresh cracked black pepper to taste
Instructions:

1.)    In a large stock pot, bring 5 cups of water along with the kosher salt to a rolling boil. Add the pasta and cook for 8 to 12 minutes. You will want the pasta a la dente. Once the pasta is ready, reserve 1/2 cup of the water, and drain the pasta in a colander. Rinse under cool water for 2 minutes and set aside.
2.)    Heat the oil in a large, deep skillet over medium heat. Add the garlic and fry for one minute and add the zucchini. Cook for 5 minutes, stirring constantly to evenly distribute the heat. Add the lemon zest and juice and cook for 2 more minutes.
3.)    Add the reserved pasta water to the pan and bring to a simmer. Cook the dish for 3 minutes and then add the cooked pasta. Keep tossing the pasta to evenly distribute the ingredients for one more minute, and then remove the pan from the heat.
4.)    Stir in the cheese, and add the desired amount of black pepper. Divide the pasta between 6 shallow bowls. Drizzle a little extra olive oil over each plate and add a touch more cheese if desired. Serve at once.
