If you are in charge of bringing a side dish to your Thanksgiving gathering this year and want an easy and tasty creation that will have everyone buzzing I highly suggest this roasted green bean recipe for your Thanksgiving feast. Unlike the usual canned green bean dish with the fried onions and mushroom soup, ( not that this isn't good) , this roasted green bean side dish provides a fresh clean taste that won't make you feel heavy as well as ease your joints in the process. This is a great dish that can be served year round although it has become a regular for my Thanksgiving meal. This recipe is designed to serve 4-6 as a side dish so you can increase the amount if needed.
Roasted Green Beans with Shiitake Mushrooms
1 lb fresh green beans, halved
6 oz fresh shiitake mushrooms, you can sub cremini , thinly sliced
2 large shallots, thinly sliced
2 large garlic cloves, cushed
3 Tbs. balsamic vinegar
Extra Virgin Olive Oil
Kosher Salt and Fresh ground black pepper
Preheat oven to 325 F. Toss together beans, mushrooms, shallots, garlic cloves, vinegar, and season with salt and pepper, drizzle olive oil over bean mixture just enough to coat. Place in baking dish and bake for about 12 -15 minutes, shaking dish about half way through baking time. I prefer my green beans to have a crunchy texture, but if prefer for softer beans bake longer. If you are bringing this side dish to your Thanksgiving location you can prep the dish and bake at the feast location, (provided there is oven space.)
