Quick And Easy Holiday Cookie Recipes

Tis the season to bake cookies, though for some it is not a favorite activity but in these hard financial times it is a quick and easy way to spread the holiday cheer, if you have the right recipe.  Some proclaim they can not bake worth a dime and fear their ovens, no worries, here are two holiday cookie recipes that are quick and easy and do not require a lot of time or effort.

Chocolate Dipped Shortbread Cookies  




2 Cups All purpose Flour
1/4 tsp salt
2 sticks unsalted butter, at room temperature
1/2 Cup powdered sugar
1 tsp. vanilla extract

7 oz bittersweet chocolate, chopped


Sift powdered sugar, set aside.
Sift flour and salt, set aside
**I recommend placing each on a piece of parchment paper for easy application
In a mixing bowl, beat butter till light and fluffy then slowly add sugar and mix for 3 minutes.
Add vanilla extract mix 1 minute
Slowly add flour and salt mixture just till incorporated.
Shape into a flat disk and chill for one hour.


Preheat oven to 350 F.
On a lightly floured surface roll out cookie dough to a 1/4 inch rectangle.  I use a pasta cutter, but a knife will do just fine for cutting the cookies into your desired size of rectangles. (See picture)

Place cut cookies on non stick baking sheets and cool in fridge for about 15 minutes.
** You want to keep the butter firm
Place cookies in the oven and bake till light golden brown,
Meanwhile place chopped chocolate in bowl and set over a simmering pot of water, this will gently melt the chocolate and not burn. about 8 minutes.
Cool the cookies on rack about 20 minutes

Now you can dip the cookies into the melted chocolate and place on parchment paper to set up the chocolate.

**Depending on the size you cut the cookies this can make 20+ cookies.

No Bake Chocolate Peanut Butter Cookies



2 cups sugar
4 tablespoons cocoa
1 stick butter
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla
3 cups oatmeal



In a heavy saucepan bring to boil the sugar, cocoa, milk, butter.
Then add peanut butter, vanilla, and oatmeal.
Stir ingredients quickly and remove from heat.


On a piece of parchment paper drop desired size cookie and cool.
**I like to use a small scoop for quick and easy cookies.
