Book Review of Kitchen Confidential by Anthony Bourdain

If you consider yourself a true blooded foodie, or work in the culinary arts industry chances are you have came across the name Anthony Bourdain, and if you haven't then it is time to get your head out of your ass.  Kitchen Confidential written by Anthony Bourdain takes the reader on a crazy ride of how this raw talented chef came to be.  What I admire the most about Kitchen Confidential and Anthony Bourdain is there is not candy coating the truths behind his success or his dark side on his personal demons.  In fact throughout the book, the reader is drawn in by Anthony Bourdains trials and errors in life, learning the hard way, all the way, and you will no doubt drop your jaw a few times by his bar none attitude.  The guy tells it like he sees it, yet he has done this throughout his career well before the public gave a shit about what he thought.  This is not the only reason why I dig this book, as a chef I silently nod and laugh out loud simultaneously at Mr. Bourdain's hard knocked adventures both in and out of the kitchen, for I can share the same incidences.   I think if one wants to realize how hard this profession is to succeed in and understand that no pussies are allowed in this industry, I definitely suggest that you read Kitchen Confidential by Anthony Bourdain, even if you not a foodie, you are still in for a crazy read.

As for some who feel this guy is a sell out because he chose to appear on TV, well let me ask you this, how many people do you now that would eat pig snout encrusted with fecal bacteria?  I can name about 20 other chef's or that there the likes of that have "sold out".  I strongly doubt Anthony Bourdain is going to put his mug shot on box of Ritz anytime soon

What Are Tobacco Onions | Recipe for Angry Onions

What Are Tobacco Onions - Are they the same as angry onions? Tobacco, a.k.a. angry onions have been all the rage in culinary creations. Many cooks have asked what are Tobacco onions, and how did they acquire  such a name?  Tobacco onions inherited their name simply by how the onions look after they have been prepared; little dark shreds similar to tobacco due to the spicy seasonings mixed with flour and thin strips of raw onion dredged and fried.  As many cooks and chefs discovered, this description did not sit well with customers as Tobacco is a taboo name now a days. So, after much deliberation; the angry onion was born.  Same concept - just more politically correct - yes even in the culinary art world.  Recipe for Angry Onions The possibilities are endless with what to serve alongside angry onions. Some recipes refer them as tobacco onions but the idea is similar.  Angry onions are lightly breaded in a spicy mixture and then fl...

More Cranberry Recipes

As I wrote the first article about cranberry recipes I began to think of all the recipes I have created both for food and drinks, and with the holidays approaching I couldn't stop myself to add some more.  Theses recipes with cranberries are a bit out of the box and will test your palette's threshold, which does not mean I am going to be sharing my recipe for sweetbreads and cranberry demi glaze, although very delectable not many like sweetbreads and they can be challenging to find. Salads are a great source for adding the sweet, tart, and chewy flavor and texture of cranberries.  I like to use dried cranberries when making salads because they are readily available year round.  I suggest to buy the cranberries in bulk if you can find them, they will be much cheaper.  Here is a list of great combinations that are great with dried cranberries, you can mix them up or follow as suggested.
