Zesty Salmon Jerky Deviled Egg Recipe


Jazz up traditional deviled eggs with the addition of smoky salmon jerky, lime juice, and creamy avocado. This recipe can be served as an appetizer or for a mid-afternoon snack to curb sugar cravings and tide you over until dinner time. The filling is rich in omega fatty acids which boosts the immune system and aids in inflammation.
The jerky adds an incredible aroma, depth in flavor, and great texture. While the avocado tames its fiery flavor and takes the place of mayonnaise. The filling also incorporates fresh herbs and spices that harmonize with the rich yolk.
You can make the deviled eggs up to 3 days in advance to enjoy later in the week for a healthy protein rich snack.

Makes 12 eggs | 2 per person

Ingredients:
·         12 hardboiled eggs, peeled and halved
·         8 ounces salmon jerky
·         1 large, ripe avocado, diced
·         3 Tablespoons low-fat sour cream
·         1/2 teaspoon cumin, ground
·         1/2 teaspoon coriander, ground
·         1/2 teaspoon granulated garlic
·         1/4 teaspoon dark chill powder
·         Zest and juice of one large lime
·         2 Tablespoons extra-virgin olive oil
·         Salt to taste
Directions:
1.)    Scoop out the yolks from the halved eggs and place in a large mixing bowl. Place the egg white shells on a large plate and set aside.
2.)    To the mixing bowl, add the salmon jerky, avocado, sour cream, spices, zest and juice of the lime, and the olive oil.
3.)    Use a wooden spoon to mash up and combine the ingredients. The filling should have some texture to it when filling the shells. Season the filling with the salt to taste.
4.)    Divide the filling between the egg white shells, cover with plastic wrap, and chill for at least 30 minutes before serving.
